On Gluten

Is there a type of wheat that people with celiac disease or a gluten intolerance are able to tolerate?

Einkorn wheat is a variety of grain that is grown with a tough outer hull, along with other unique characteristics unlike regular wheat and gluten grains. The protein in Einkorn wheat has a unique structure of beta-carotene and lutein, giving it a higher nutritional profile than most grains. Some who suffer when eating gluten grains may find that they can tolerate Einkorn wheat due to its unique protein quality.
