INGREDIENTS:
- 1 cup dry quinoa
- 1 tsp curry powder
- 4 green onions, 1/4" dice
- 1/4 cup unsweetened dried cranberries
- 1/4 cup walnuts, chopped
- Sea salt and fresh ground black pepper, to taste
INSTRUCTIONS:
- Bring 1¾ cup water and quinoa to a boil. Cover and simmer on medium-low for 15 minutes or until all the water is absorbed. Stir in remaining ingredients and serve.
