How to Use a Chef's Knife
Gena Berry, cooking instructor and associate producer of the Turner South cooking show Home Plate, offers a quick tutorial on how to hold and move your blade.
- Place your thumb and index finger on either side of the blade, just before the handle. Wrap your remaining fingers gently around the handle.
- Tuck your thumb behind your fingers and bend the fingers holding the food so fingertips are tucked. Gently hold the food with the pointer finger tucked under; you should not be able to see your nail. The rest of your fingers stay tucked and move back with the pointer finger. The side of the blade should make light contact with your fingers. Place the tip of the knife on the cutting board and move the knife through the food in a rocking, slicing motion.
