TURKEY POT PIE WITH BROWN RICE CRUST "I love chicken and turkey pot pies and think I’ve found my favorite recipe! It was so easy and it was also the first time I’ve had turnip – also a new favorite. Tip: After browning the 1-inch cubed turkey, I cut them into bite-size pieces before returning them to the pan.

- Jaime Garcia, San Jose, California "How exciting to eat a clean pot pie with a light crust that doesn’t make you feel weighed down after you enjoy it. Substitutions: We didn’t use a turnip because we can be picky eaters and we tried whole-wheat flour instead of spelt."
- Lisette Anders, Aurora, Colorado
APPLE GRILLED CHEESE WITH GRAINY MUSTARD "Sandwiches, yum. Grilled cheese sandwiches, yum times two! I served it with the Minestrone Soup with Quinoa and the combination was perfect. I would also try it with other fruits such as pears. Tip: I chose a heartier grain spelt bread, but for kids I would try a spelt bread that is more similar to white bread. And I used a mandolin to slice the apple very thin. Overall, this recipe was too easy!"- Theresa Winterhalter, McDonough, Georgia
ALMOND MILK RICE PUDDING WITH DRIED APRICOTS "Two words: yum yum! My family loved it. The portion size was just right for me, but my husband and son kept wanting more and more! It’s a very satisfying, cozy dessert, which is especially good when there’s a little chill in the air. I tried it with a touch of nutmeg on top."- Tina Straseske, Round Rock, Texas |
