Three Simple Summer Sides

Our summer side-dish requirements: quick, clean and delicious accompaniments to your favorite entrées.

Fresh Tomato Bruschetta:
Chop and combine seeded Roma tomatoes, basil leaves and garlic. Toast whole-wheat bread under the broiler, brush with olive oil and top with tomato mixture and a few grinds of black pepper.

Balsamic Grilled Plums with Goat Cheese:
Brush halved pitted plums with olive oil and grill or broil until tender. Fill each half with goat cheese and drizzle with balsamic vinegar.

Mango & Black Bean Salad:
Rinse and drain a can of low-sodium black beans and combine with diced mango, sliced scallions, chile powder and lime juice. Serve as a side dish or topping for lean protein.
