You don’t have to be a master chef to totally nail this quick-and-easy weeknight staple. It’s really more of an assembly job. You can loosely follow the steps below and riff on ingredients and cooking methods or go to the recipe link at the bottom and make it exact.

If you really don’t have the time, imagination or clue where to start, buy a pre-made rotisserie chicken and truly slap this enchilada bake together with any additional toppings, types of cheese and garnishes you fancy. 

The beauty about our Be a Better Cook series is that we’re giving you the freedom to cook sans recipe and make it your own, or reference the written recipe as needed. If you find yourself stumped, pop over to the recipe for reference, but ultimately, the goal is to start feeling comfortable swapping in different ingredients you prefer or that you just happen to have on hand and to create your own version of our recipe. The result? The same awesome you – only now – a better cook.

Step 1

Prepare chicken your favorite way (we love it roasted and then shredded!)

Step 2

Sautée your favorite enchilada veggies, think bell peppers, jalapeños and white onions.

Step 3

Arrange tortilla halves along the bottom of a casserole pan.

Step 4

Spread 1/3 of pepper mixture over tortillas.

Step 5

Top with chicken and repeat the whole process for a second layer.

Step 6

Add the last of your pepper and cheese to the top layer and bake in over for 20 minutes covered, then another 20 minutes uncovered to melt cheese.

Step 7

Garnish with red onion and cilantro – or anything you crave – and then grab a fork and dig in!
