If you're one of those people who think a slow cooker is only good for making stews and heartier meals, then you might be surprised at how many side dishes can actually be made in the slow cooker. Below are a few out-of-the-box uses for your slow cooker to get you started.
Pierce 4 6-oz potatoes with a fork and wrap individually in foil. Place in a 4-qt slow cooker, cover and cook on low for 8 hours (or on high for 4 hours).
Corn on the Cob:
Wrap 4 ears corn, husks removed, individually in foil. Place in a 4-qt slow cooker, cover and cook on low for 8 hours (or on high for 4 hours).
Cut vegetables into 1-inch chunks or cubes (try this with root veggies, squash, peppers or even whole garlic cloves and cherry tomatoes). Place in a 4-qt slow cooker. Drizzle with oil and season with sea salt and fresh ground black pepper, cover and cook on low for 5 to 6 hours (or on high for 2 1/2 to 3 hours). For larger amounts, use a 6-qt slow cooker. If desired, finish with chopped fresh herbs.
Try putting your dip ingredients in a 2-cup heat-resistant glass measuring cup, then putting the cup into the slow cooker on low for 4 hours (or high for 2 hours).
