What to Make this Weekend: If you only make one recipe this weekend between Netflix and naps, this is it.
Every year we create, test, taste – and retest – hundreds of healthy, delicious recipes for Clean Eating, including a number of baked goods such as cookies, cakes and pies. But here’s the funny thing: No matter how many dessert recipes we’ve created, there is one recipe in our bank that still stands out, our Chocolate Chip Almond Butter Cookies.
Make these decadent cookies once, and you’ll understand why. They have the sweet, chewy quality of your standard white-flour cookie but made healthier with wholesome almond butter to add protein and good-for-you fats to the mix. You don’t need a reason to make these cookies, but I’ll give you three just the same.
- They work for most dietary restrictions. With an almond butter base, they are completely flourless, which means they are both gluten- and grain-free. They also happen to be dairy-free. Paleo? Simply swap out the Sucanat for coconut sugar. Allergic to almonds? Try another nut butter such as cashew butter.
- You probably already have the ingredients in your pantry. Six ingredients – you read that right – is all you need. Most of us have almond butter, eggs, baking soda, Sucanat (or any clean granulated sugar), salt and a bar of chocolate kicking around without having to pop out to the grocery store.
- They are uber easy to make, and to clean up after. Simply blend all ingredients in one bowl, shape into cookies and bake on cookie sheets for 10 to 12 minutes (they won’t look done, but trust us, once cooled they have a perfectly crisp exterior and soft interior.) A recipe doesn’t get easier than this. An added bonus? They freeze well so you can make an extra batch to pull out when you need a treat.
