Avocado Egg Salad

This super-simple avocado egg salad is packed with lots of protein and plenty of healthy fats.

  • 6 eggs

  • 2 avocados, peeled, pitted and diced

  • 1 lime

  • ⅓ cup chopped fresh cilantro

  • ¼ cup chopped fresh chives

  • ½ tsp black pepper

  • ¼ tsp salt

  • ⅛ tsp red pepper flakes (optional)


Hard-boil eggs; cool. Peel, chop and place in a bowl. Stir in avocados, lime zest, cilantro, chives, black pepper, salt and red pepper flakes (optional).
