Chipotle & Pinto Bean Salsa

Ingredients

  • 1 1/2 cups cooked pinto beans
  • 1 cup diced Roma or heirloom tomatoes
  • 1/4 cup finely chopped fresh basil
  • 1/4 cup minced green onion
  • Zest and juice of 1 lime
  • 1 clove garlic, puréed
  • 3 tbsp minced chipotle peppers in adobo sauce
  • 2 tbsp extra-virgin olive oil
  • 2 tsp unsweetened cocoa powder
  • 1/4 tsp sea salt

Preparation

  1. To a medium bowl, add beans. Using a fork, mash about half of beans. Add remaining ingredients and mix until fully incorporated. Refrigerate for 10 minutes to let the flavors come together.
