Cooked Quinoa

High in protein and fiber, quinoa is not only versatile, it also tastes wonderful. We can't get enough of this grain. Cook it ahead and use it in recipes throughout the week.

Ingredients

  • 2 cups dry quinoa

Preparation

Cook 2 cups dry quinoa according to package directions (to yield about 5½ cups cooked). Or cook ½ cup quinoa (to yield about 1½ cups cooked) to use in the Chipotle Beet Bean Veggie Burgers and sub in cauliflower rice for all other instances.

Keep ’em fresh: Cover and refrigerate for up to 5 days.
