In the height of summer, you won't find a better side dish than this deceptively simple combination of peak-season produce.

Ingredients

  •   4 ears corn  

  •   2 tomatoes, diced  

  •   1 cucumber, diced  

  •   3 green onions, sliced  

  •   1 cup chopped cilantro  

  •   ¼ cup each vinegar and EVOO  

  •   ¼ tsp salt  

Preparation

Cut kernels off the ears of corn; toss with tomatoes, cucumber, green onions, and  chopped cilantro. Combine vinegar, EVOO and salt; toss with corn mixture.
