Creamy Curry Dressing

Serve this spicy dressing over spinach, grated carrot, red pepper and cilantro topped with dried currants or raisins, green onion and crushed peanuts.

Ingredients

  • 1/4 cup apple cider vinegar
  • 2 tbsp grape seed oil
  • 1/2 cup of your favorite homemade hummus
  • 1 tsp ground turmeric
  • 1/2 tsp paprika
  • 1/2 red chile, seeded and minced
  • 1 tsp puréed ginger
  • Pinch sea salt

Preparation

  1. To a Mason jar, add all ingredients and shake vigorously until thoroughly combined.
