Ingredients

  • 2 4-oz boneless, skinless chicken breasts
  • 1/2 tsp each sea salt and ground black pepper, divided
  • 2 tbsp extra-virgin olive oil, divided
  • 4 cups (14 oz) spiralized butternut squash noodles
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp arrowroot starch
  • 1 cup whole-milk kefir (Try: Lifeway Organic Kefir Cultured Whole Milk Plain)
  • 1/2 cup shredded Parmesan cheese
  • 1 tbsp chopped fresh chives

Preparation

  1. Season chicken with one-half of each salt and pepper. In a large skillet on medium-high, heat one-half of oil. Add chicken and cook 4 to 5 minutes per side, until cooked through. Transfer to a plate; cover.
  2. Reduce heat to medium. Heat remaining one-half of oil. Add noodles and garlic; cook, stirring gently, 6 to 8 minutes. Turn off heat.
  3. To a small saucepan, add broth. Whisk in arrowroot. Set over medium heat and bring to a simmer, stirring, 3 minutes. Turn off heat; whisk in kefir, cheese and chives.
  4. Slice chicken. Divide noodles, sauce and chicken among bowls.
