Try this creation straight from the Backyard Bowls kitchen. Pink pitaya (aka dragon fruit) is rich in fiber and antioxidants.
- 1/2 cup coconut water
- 2/3 cup peeled and diced dragon fruit (aka pitaya)
- 2/3 cup frozen banana chunks
- Toppings (Optional):
- 1/3 cup all-natural granola
- Sliced banana,
- Sliced kiwi,
- 1 tbsp unsweetened shredded coconut
- Drizzle raw
- To a blender or food processor, add all ingredients; blend until smooth. Serve with toppings of your choice.
