A bonus recipe from our inaugural baking contest, these are the perfect dunkers for your morning cup of coffee!
1 cup organic evaporated cane juice
2 cups almond flour/meal
1 tsp vanilla
1/4 tsp pure almond extract
2 egg whites
1/2 tsp ground cinnamon
1/2 cup finely chopped almonds
Preheat oven to 350°F. In a medium mixing bowl, combine all ingredients except chopped almonds; stir with a fork until dough holds together.
With damp hands, form roughly 1 1/2-inch balls and roll in chopped almonds lightly to cover. Transfer to a parchment-lined baking sheet, flatten slightly with fingertips and bake for 15 to 20 minutes, until golden brown.
There's no need for serving plates or forks with this gooey chocolate and peanut butter dessert - simply serve these bites on a large platter and let guests dig in. The best part? You can make these in advance and store in the freezer until the day of your party.
