Flourless Almond Cookies

A bonus recipe from our inaugural baking contest, these are the perfect dunkers for your morning cup of coffee!

Ingredients

  • 1 cup organic evaporated cane juice
  • 2 cups almond flour/meal
  • 1 tsp vanilla
  • 1/4 tsp pure almond extract
  • 2 egg whites
  • 1/2 tsp ground cinnamon
  • 1/2 cup finely chopped almonds

Preparation

  1. Preheat oven to 350°F. In a medium mixing bowl, combine all ingredients except chopped almonds; stir with a fork until dough holds together.
  2. With damp hands, form roughly 1 1/2-inch balls and roll in chopped almonds lightly to cover. Transfer to a parchment-lined baking sheet, flatten slightly with fingertips and bake for 15 to 20 minutes, until golden brown.
