Grilled tomatoes sit atop crunchy bread in this easy app. Grilling is a great way to improve the depth of flavor in tomatoes that are less than perfectly ripe — cooking concentrates their sunny sweetness and adds a hint of smokiness, mellowing their acidity. Slices of creamy mozzarella and sliced basil are a classic combination, no matter what season.

Ingredients

  • 6 small tomatoes
  • 4 garlic cloves, divided
  • 1 tsp. dried thyme
  • 3 Tbsp. olive oil, divided,
  • 1 tsp. vegetable oil
  • 6 (½-inch-thick) slices French bread
  • 1 (6-oz.) ball fresh mozzarella, drained and cut into 12 slices
  • 10 fresh basil leaves, thinly sliced
  • Salt and pepper to taste

Preparation

  1. Slice each tomato into 3 (1/2-inch-thick) slices. Mince 2 garlic cloves. In a small bowl, combine minced garlic and thyme; set aside. Drizzle both sides of tomato slices with 1 total tablespoon olive oil.
  2. Preheat grill to medium, or preheat grill topper or cast-iron skillet over medium. 
  3. Rub grill grate, grill topper, or skillet with vegetable oil. Place tomatoes on grill, and cook until tomatoes are lightly caramelized and starting to soften, 3 to 5 minutes. Turn tomatoes over, sprinkle with garlic-thyme mixture, and season with salt and pepper, if desired. Grill until tomatoes are softened, 3 to 5 minutes. Remove to a plate, and set aside.
  4. Drizzle both sides of each bread slice with 1 tablespoon olive oil. Grill until golden brown, 2 to 3 minutes per side. Rub remaining 2 garlic cloves over one side of each piece of grilled bread.
  5. Place bread on a plate, garlic-rubbed side up. Divide tomatoes among bread slices, and top with sliced mozzarella. Season with salt and pepper, then scatter with basil, and drizzle with remaining 1 tablespoon olive oil. Serve immediately.
