Lemon Tahini–Smothered Broccolini with Crunchy Seeds
The long, slender stems of broccolini are completely edible, so don’t ditch them. Add a serving of whole grains such as freekeh, bulgur or millet to complete this vegetarian meal, or serve the vibrant greens alongside grilled fish or chicken.

Ingredients
- 1 tbsp unsalted sunflower seeds
- 2 tsp sesame seeds
- 1½ tbsp chia seeds (TRY: Navitas Organics Chia Seeds)
- 1/3 cup tahini paste
- 1½ tsp finely grated lemon zest + 2 tbsp fresh lemon juice
- ½ tsp sea salt
- Pinch ground cayenne pepper
- 1½ tbsp extra-virgin olive oil
- 2 bunches (7 oz each) broccolini, trimmed, or 14 oz broccoli crowns cut into long slices with stems attached
Preparation
1. In a small skillet on medium, toast sunflower and sesame seeds, stirring frequently, until golden, 3 minutes. Add chia; set aside.
2. In a small bowl, whisk together tahini, ¼ cup boiling water, lemon zest, lemon juice, salt and cayenne until smooth. Whisk in olive oil and set aside. (NOTE: If mixture is very thick, add more water to adjust consistency.)
3. In a steamer basket over boiling water, steam broccolini until crisp-tender, 4 to 5 minutes. Arrange broccolini on a platter. Drizzle with tahini dressing and sprinkle with toasted seed mixture.
