Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 lime, zested and juiced
  • 1⁄2 jalapeño, seeded and finely chopped
  • 2 tsp Dijon mustard
  • 1⁄4 tsp each sea salt and ground black pepper
  • 2 cups butter lettuce, torn
  • 2 cups mixed sprouts (such as sunflower and radish)
  • 1 small grapefruit, peel and pith removed, segmented
  • 1 avocado, sliced
  • 2 mini cucumbers, sliced
  • 2 radishes, thinly sliced
  • 1⁄4 cup red onion, thinly sliced
  • 12 oz hot smoked salmon, broken into pieces
  • 3 tbsp sunflower seeds, toasted

Preparation

  1. In a small bowl, whisk together oil, lime zest and juice, jalapeño, mustard, salt and pepper.
  2. In a medium bowl, place lettuce, sprouts, grapefruit segments, avocado, cucumber, radish and onion. Add salad dressing and gently toss. Divide salad among plates. Garnish with smoked salmon and sunflower seeds.
