One-Bowl Paleo Banana Loaf with Chocolate Chips

Let the kid in you jump for joy over this luscious banana loaf that the grownup in you can whip together in 10 minutes flat. For best results, use very ripe bananas.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 3 scoops (3 tbsp) collagen powder 
  • 2 tbsp ground flaxseeds
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/8 tsp sea salt
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/3 cup dairy-free chocolate chips
  • 1/2 cup chopped raw pecans

Preparation

1. Preheat oven to 350°F. Line a 9 x 5-inch loaf pan with parchment paper. Set aside.

2. In a large mixing bowl, mash bananas. Stir in eggs, collagen, flaxseeds, vanilla, cinnamon and salt; mix well. Add almond flour, coconut flour and baking soda; mix well. Fold in chocolate chips and pecans.

3. Pour batter into prepared pan; bake 40 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

4. Let cool in pan 20 minutes before transferring to a wire rack to cool completely, about 20 minutes more.
