Thinly sliced Brussels sprouts make a delicate slaw. Apples and walnuts add some sweetness and crunch.

Shaved Brussels Sprouts Salad

  • 8 cups shredded Brussels sprouts

  • 2 apples, cored and diced

  • 1 cup walnuts

  • ½ cup goat cheese

  • ¼ cup olive oil

  • 2 tbsp each apple cider vinegar and maple syrup

  • 1 clove garlic, chopped

  • pinch each of sea salt and ground black pepper


Combine Brussels sprouts, apples, and walnuts. Top with cheese. In a jar, combine remaining ingredients and shake. Store dressing and salad separately and combine just before serving.
