Shrimp Penne with Creamy Vodka Tomato Sauce

Ingredients
- 8 oz whole-wheat penne pasta
- 1 tbsp olive oil
- 1 small yellow onion, finely chopped
- 2 cloves garlic, sliced
- 1 18-oz BPA-free jar unsalted crushed tomatoes
- ¼ cup vodka
- Pinch red pepper flakes
- 1 lb medium shrimp, peeled and deveined
- ¼ cup heavy cream
- ½ tsp sea salt
- ¼ tsp ground black pepper
- ½ cup chopped fresh basil
- ¼ cup grated Parmesan cheese
Preparation
1. Cook pasta according to package instructions; drain and set aside.
2. Meanwhile, in a large sauté pan on medium-high, heat oil. Add onions and sauté until translucent, 4 minutes. Add garlic and sauté until fragrant, 30 seconds. Add tomatoes, vodka and pepper flakes and bring to a simmer. Reduce heat to low, cover and cook, stirring occasionally, until flavors meld, 10 minutes.
3. To sauce, add shrimp, cream, salt and black pepper. Continue to cook, uncovered, stirring occasionally, until shrimp are cooked through, 5 minutes. Stir in cooked pasta, basil and cheese.
