Combine 1 tsp each ground cumin, smoked paprika, garlic powder and lemon zest. Add ¼ to ½ tsp red pepper flakes (to taste) and ¼ tsp salt. Toss spice mixture with 10 oz skinless wild salmon, cut into cubes. Sauté 2 minutes per side, until cooked. Serve with lemon wedges.
