Spicy Summer Veg Salsa

Ingredients
- 1/2 cup fresh corn kernels
- 1/2 cup diced red bell pepper
- 1/2 cup diced Roma or heirloom tomatoes
- 1/2 cup diced zucchini
- 1/4 cup minced green onions
- 1/4 cup finely chopped fresh cilantro
- 1/4 cup minced radish
- Zest and juice of 1 lime
- 1 small red chile, minced
- 2 tbsp finely chopped fresh basil
- 2 tbsp olive oil
- 1/4 tsp sea salt
Preparation
- To a medium bowl, add all ingredients and mix until fully incorporated. Refrigerate for 10 minutes to let the flavors come together.
