Ingredients

  • 1/2 cup fresh corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced Roma or heirloom tomatoes
  • 1/2 cup diced zucchini
  • 1/4 cup minced green onions
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup minced radish
  • Zest and juice of 1 lime
  • 1 small red chile, minced
  • 2 tbsp finely chopped fresh basil
  • 2 tbsp olive oil
  • 1/4 tsp sea salt

Preparation

  1. To a medium bowl, add all ingredients and mix until fully incorporated. Refrigerate for 10 minutes to let the flavors come together.
