These tacos are essentially your usual steak tacos, but with the addition of chunks of sweet potatoes. Not only do the sweet potatoes add a super satisfying and filling boost of fiber, but they also contain a whole lot of vitamins and minerals. Steak & Sweet Potato Tacos
- Preheat the oven to 425°F. Line a baking sheet with parchment paper. Toss the sweet potato, cabbage, onion, oil, cumin, chipotle powder and one-half of salt and pepper on the prepared sheet. Roast until sweet potatoes are tender, 30 minutes. Sprinkle with cilantro.
- Heat a cast iron skillet over medium-high heat. Season steak with remaining salt and pepper. Reduce heat to medium. Cook steaks 3 minutes per side for medium-rare, or to desired doneness. Transfer steaks to a cutting board and let rest, covered for 5 minutes, then thinly slice.
Top tortillas with steak, roasted vegetables and sour cream; top with avocado and hot sauce (if using). Sprinkle with squeezed lime juice.
