The What-Came-First Bowl
A double dose of protein, from both egg salad and chicken breast, combine with a variety of crisp veggies and a drizzle of spicy mayonnaise.

Ingredients
- 5 tbsp olive or avocado oil mayonnaise, divided
- 1 tsp hot sauce
- 2 large hard-boiled eggs, diced
- sea salt and ground black pepper, to taste
- 1 cup chopped romaine lettuce
- 1 cup guacamole
- 1 cup diced cooked chicken breast
- 1/2 cup chopped tomatoes
- chopped green onions or chives, for garnish
Preparation
1. In a small bowl, combine 2 tbsp mayonnaise and hot sauce. Set aside.
2. In a medium bowl, combine eggs, remaining 3 tbsp mayonnaise, salt and pepper.
3. Divide lettuce among 4 bowls. Divide guacamole, chicken, tomatoes and egg salad mixture over top. Serve with a drizzle of mayonnaise mixture and green onions.
