What’s your take on legumes? I personally can’t get enough and here’s why. Legumes are an ultra easy, whole-foods alternative to meat. Due to their nitrogen-fixing properties, legumes need much less intensive fertilizers compared to other vegetation. This means that overall, they have a much lower carbon footprint, which is great because the intensive usage of nitrogen fertilizers for industrial agriculture is one of the largest contributors to global greenhouse gas emissions. Legumes also help restore soil nutrition and can reduce pests and disease for other plants when used in a crop rotation with non-legumes.

They are rich in plant protein, fiber, B-vitamins, iron, folate, calcium, potassium, phosphorus and zinc. They are low in fat and have less saturated fats overall compared to meat.
