If you’re a beginner or intermediate cook who’s looking to improve your culinary prowess in the kitchen, Joanne Weir’s Cooking Confidence: Dinner Made Simple may be just what you need. In addition to the book’s wonderful selection of dinner recipes, the James Beard Award–winning chef and food television host shares her top kitchen tips to help take the stress and intimidation out of cooking, from butterflying chicken to cooking the perfect hard-boiled egg. Recipes are accompanied by recommended wine pairings as well as side, appetizer and dessert suggestions, making it easier for you to put together a dinner menu if you’re strapped for time. Weir’s use of grass-fed meats, kosher salt and clean oils, among a host of other CE-approved ingredients is commendable, but clean alternatives will be required for the book’s occasional use of non-CE-approved ingredients, which include sugar and cornstarch.
