What is a Carbohydrate?

Q: I am trying to limit the carbs in my diet, but I’m confused about what foods are actually considered carbohydrates.

Carbohydrate-rich foods include grains, cereals, breads, pastas, beans, fruits and vegetables. If you are trying to limit your consumption of carbs, the key is nutrient density. In simple terms, you want to get the greatest amount of nutrients per carbohydrate calorie. The best way to do this is to create a diet rich in non-starchy vegetables. These whole foods are high in nutrients and water, and low in calories and carbs. Next, add a small amount of fruits, which are also rich in vitamins and antioxidants but a bit higher in carbohydrates. Follow with beans, which are packed with protein and fiber and will slow down the digestion and absorption of sugars. Last, add small amounts of starchy vegetables, whole grains and cereals in their least processed forms (think brown over white).
