What to Make This Weekend: This Dreamy Pie

This make-ahead freezer pie features a surprising ingredient: avocados.

If you’re avocado obsessed like us, you’ve probably tried them in every possible iteration of guacamole, avocado toast and salad dressing by now. But here’s a clever use you may not have tried: avocado lime pie.

It’s a healthier take on a key lime pie, created by our very talented recipe tester, Sarah Sweeney, using heart-healthy avocados to lend a creamy texture and bright green color. But I promise you, this pie doesn’t taste like a health food. It has a nutty crust and a creamy filling that hits just the right balance of sweet and tart. In fact, when our team tasted this pie, most of us (myself included) couldn’t stop at one slice.

It’s gluten-free and you could easily adapt it to make it dairy-free and Paleo: simply switch out the whipping cream and cream cheese for coconut cream and non-dairy cream cheese, respectively.

The best part? You can make it entirely ahead: make a pie (or two) and keep it in the freezer for when those sweet cravings hit. It looks fancy, but only takes 30 minutes to assemble before chilling in the freezer.
