Peppers are one of the most versatile vegetables in both flavor and recipe. They’re easy to chop up and toss into any dish but packed with a plethora of nutrients like vitamin A, vitamin C, potassium, folic acid and fiber. Bell peppers have antioxidant properties, which can help protect against cardiovascular diseases. Shishito peppers are high in dietary fiber and vitamin E, boosting skin and eyesight health.

Jalapeños tend to grow like mad once they get going, so here’s an easy (and delicious!) way to use up those peppers at once.

Instead of using traditional hamburger buns, this flavorful sloppy joe is served in roasted bell peppers and finished with basil sprigs for a pop of color and herbaceous flavor.

Shishitos are usually mild, but every once in a while you get a firecracker. That’s what makes this dish really fun! Blistering the beans and peppers in a skillet gives them a nice charred taste without having to toss them on the grill or under the broiler. If you can’t find shishito peppers, try multicolored mini bell peppers instead.
