Strawberry Applesauce
Applesauce is rewarding to make at home for its better, fresher taste, and compared to store-bought, it’s entirely free of added sugars and preservatives. Strawberries give a tangy bite and pretty pink hue and take advantage of the extra-flavorful, first-of-the-season fruit.

Ingredients
- 2 1/4 lb sweet apples (such as Fuji, McIntosh or Gala), peeled, cored and quartered (about 6)
- 3 cups strawberries, hulled and halved
- 2 tbsp fresh lemon juice
Preparation
1. To a large pot, add apples, strawberries, 2 cups water and lemon juice. Bring liquid to a boil, reduce heat to medium and cover. Cook for 15 minutes then uncover and cook until most of the water has evaporated, leaving just a spoonful or two, 10 to 25 minutes more.
2. Transfer fruit and any remaining liquid to a blender and blend until smooth. Refrigerate until fully chilled, about 1 hour, 30 minutes. Keep covered in the refrigerator for up to 4 days.
