What to Make This Weekend: The Best Buffalo Potatoes

Twice-baked potatoes have always been a restaurant staple for me – creamy, salty, sometimes spicy, they hit all the right notes. But since we haven’t been able to eat out as much as we would have liked over the past year, I’ve been looking for ways to bring that restaurant indulgence home.
These Buffalo Chicken Twice-Baked Potatoes hit the mark every time. It actually combines the concept of a twice-baked potato with the flavors of buffalo chicken wings. It’s a healthier version, using ghee to impart that buttery taste and a clean hot sauce (we love Frank’s RedHot for this) to bring the heat.
This recipe was originally created for our Whole30 issue so it’s Whole30-friendly – which means it’s free of gluten, grains and sugar – but trust me, it doesn’t feel lacking in flavor.
It’s also surprisingly easy to make: bake the potatoes, cook the chicken, adding in ghee and hot sauce and then mix with the potato flesh. It also calls for a dreamy mayo-based ranch sauce, which you can make entirely ahead of time. In fact, you can make the entire recipe almost through the end of Step 4 (without baking them for the second time) and just keep in the fridge until ready to eat, then bake and assemble.
When I make this dish, I usually double the amount of the ranch sauce – it has an umami flavor that will hook you – and because I’m a lightweight when it comes to spice, I reduce the amount of hot sauce way down, to about ¼ or ⅓ cup. If I want to kick it up more, I can just add an extra dash of hot sauce when serving.
Want to make it even simpler? You can use chopped or pulled rotisserie chicken and just combine with the melted ghee and hot sauce for flavor.
This makes the perfect easy weekend dinner paired with a simple salad – or make a batch on Sunday and eat it for lunch all week long.
