Chickpea Tagine with Couscous

Traditionally cooked in a tall earthenware pot known as a tagine, the North African dish of 
the same name is a saucy, spiced stew that’ll warm you from the inside out. Our quick and easy recipe is vegetarian, and chock-full of hearty veggies and chickpeas for a truly satisfying dish.

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • 1 tbsp unsalted tomato paste
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 3 cups low-sodium vegetable broth
  • 1 sweet potato, peeled and cut into
  • 1-inch pieces
  • 1 carrot, peeled and cut into 1-inch
  • pieces on an angle
  • 1/2 small head cauliflower, cut into
  • 2-inch florets
  • 1/2 lb butternut or Hubbard squash,
  • peeled and cut into 1-inch pieces
  • 3/4 tsp sea salt
  • 1/2 tsp fresh ground black pepper
  • 1/4 tsp ground cayenne pepper
  • 1 15-oz BPA-free can chickpeas (aka
  • garbanzo beans), drained and rinsed
  • 3/4 cup whole-grain couscous
  • 1/2 cup fresh cilantro leaves, chopped

Preparation

  1. In a large saucepan or Dutch oven, heat oil on medium. Add onion and sauté, stirring often, until beginning to brown, about 4 minutes. Add garlic and ginger and sauté for 30 seconds. Add tomato paste, paprika, cumin, turmeric and cinnamon and sauté, stirring constantly, for 30 seconds.
  2. Add broth, sweet potato, carrot, cauliflower, squash, salt, black pepper and cayenne. Partially cover, bring to a simmer and cook until squash and sweet potatoes are tender, about 15 minutes. Add chickpeas and simmer for 5 more minutes.
  3. In a small heat-proof bowl, add couscous. Remove 1¼ cups cooking liquid from chickpea mixture and pour over couscous. Cover with a plate and let stand for 5 minutes. Add cilantro and fluff with a fork. Serve tagine with or over couscous.
