Chipotle & Pinto Bean Salsa

Ingredients
- 1 1/2 cups cooked pinto beans
- 1 cup diced Roma or heirloom tomatoes
- 1/4 cup finely chopped fresh basil
- 1/4 cup minced green onion
- Zest and juice of 1 lime
- 1 clove garlic, puréed
- 3 tbsp minced chipotle peppers in adobo sauce
- 2 tbsp extra-virgin olive oil
- 2 tsp unsweetened cocoa powder
- 1/4 tsp sea salt
Preparation
- To a medium bowl, add beans. Using a fork, mash about half of beans. Add remaining ingredients and mix until fully incorporated. Refrigerate for 10 minutes to let the flavors come together.
