Homemade Pomegranate Molasses

NOTE: Keep covered in the fridge and use in place of bottled pomegranate molasses. You can use it on salad dressings, drizzled over Greek yogurt or even mixed into drinks such as soda water.
Ingredients
- 2 cups pomegranate juice
- 1/4 cup raw honey
- 2 tbsp fresh lemon juice
Preparation
- In a small saucepan on medium-high, bring all ingredients to a boil. Reduce heat to medium and simmer for 45 to 60 minutes, until reduced to about 1/2 cup. Pour into a small heat-proof bowl and set aside to cool. Molasses will thicken upon cooling.
