Smoky Stuffed Jalapeño Peppers

Here’s a delicious and fresh twist on the classic jalapeño popper—stuffed with cheese and grilled corn and bell pepper. Grilling brings out the pepper and corn’s inherent sweetness, and, along with smoky paprika, gives the rich stuffing a wood-fired flavor that’s irresistible.
If you have a grill pan for an outdoor grill, this is a great opportunity to use it to keep the jalapeño peppers from tipping between the grill grates. If not, place the peppers along the grates in a way that holds them in place as they cook. Serve as a fun party appetizer or as a side with grilled chicken or pork.

Smoky Stuffed Jalapeño Peppers
Ingredients
- 1 large red bell pepper
- 1 large ear fresh corn, husked
- ¼ tsp. olive oil
- 2 oz. cream cheese, softened
- ⅛ tsp. fine sea salt
- ⅛ tsp. ground black pepper
- ⅛ tsp. smoked paprika
- 10 large fresh jalapeño chiles (about 1 lb.), halved lengthwise and seeded
- ¼ cup chopped fresh cilantro, optional
Preparation
- Heat a grill to medium-high. Place bell pepper and corn on grill. Close lid, and grill, turning frequently, until blackened on all sides, 5 to 7 minutes for the bell pepper and 10 to 12 minutes for the corn. Place bell pepper in a bowl, and cover with plastic wrap. Let bell pepper and corn stand until cool enough to handle. Using a paring knife or your fingers, peel away blackened skin from bell pepper, and discard skin. Finely dice bell pepper. Cut kernels from corn.
- In a large bowl, stir together bell pepper, corn, cream cheese, salt, pepper, and paprika until well combined. Spoon 1 teaspoon mixture into each jalapeño half, spreading evenly.
- Place jalapeños, skin side down, on grill. Close lid, and grill until jalapeños are slightly softened and lightly grill-marked, 4 to 5 minutes. To serve, sprinkle with cilantro, if using.
