Fire-Roasted Lentils

Lentils and fire-roasted tomatoes combine to make a hearty, plentiful plant-based protein dish.

  • ¼ onion, chopped
  • 1 clove garlic, minced
  • 1 tbsp avocado oil
  • 1 can fire-roasted diced tomatoes
  • ½ cup dry red lentils
  • 1 cup vegetable broth


Sauté ¼ onion, chopped, and 1 clove garlic, minced in 1 tbsp avocado oil. Add 1 can fire-roasted diced tomatoes, ½ cup dry red lentils and 1 cup vegetable broth; bring to a boil, reduce to simmer, cover and cook for 20 minutes.
