Sweet & Sour Edamame Salad with Spinach

Ingredients
- 1½ tbsp 100% apple juice
- 2 tsp apple cider vinegar
- 1 tsp toasted sesame oil
- 1 tsp reduced-sodium tamari
- 1½ cups frozen shelled edamame, thawed
- 1 cup peeled and grated carrots
- 2 cups baby spinach
Preparation
- In a small bowl, whisk apple juice, vinegar, oil and tamari. In a large bowl, combine edamame and carrots. Add apple juice mixture to edamame mixture and toss to coat. Add spinach to plates and top with edamame mixture, dividing evenly.
