Sweet Cherry Cilantro Salsa

Ingredients
- 2 cups pitted and diced dark sweet cherries
- 1/4 cup finely chopped fresh cilantro
- 1/4 cup minced red onion
- 1 jalapeño chile pepper, seeded and minced
- Zest and juice of 1/2 lemon
- 1 tbsp pure maple syrup
- 2 tsp puréed fresh ginger
- 1/4 tsp sea salt
- Ground black pepper, to taste
Preparation
- To a medium bowl, add all ingredients and mix until fully incorporated. Refrigerate for 10 minutes to let the flavors come together.
